At our family party on March 25th, Sylvain and Marie-Elisabeth poo-pooed the idea of birthday candles, to my disappointment. Fortunately, Jenny rectified my candle-less birthday celebrations when I went to her house on Thursday the 27th for our weekly get-together. She had made an absolutely fabulous apple-walnut oil cake, which I have requested now becomes a birthday tradition! She substituted walnut oil for vegetable oil because she was out, which turned out to be quite the fortuitous find. The cake was moist and tasty, and the top had caramelized at places, adding extra deliciousness.

The walnut oil sounds worth experimenting with as a great secret ingredient in other cake and cookie recipes, too. Quelle belle découverte!
