Beet Surprise Cake

For Cake:
2 tsp lemon juice
1 cup beets, boiled and grated
2 1/2 cups flour
1 tsp salt
2 tsp baking soda
2 cups sugar
1/2 cup unsweetened cocoa powder
1 1/4 cups melted butter
4 eggs, beaten
2 tbsp honey
1/2 cup milk
2 tsp vanilla

For Frosting:
3 tbsp cream
3 oz cream cheese
1 tsp vanilla
1 pinch salt
1 lb confectioner's sugar

1. Greast 9X13" pan. Preheat oven to 350°F. Sprinkle lemon juice over beets. Set aside.

2. Combine flour, salt, soda, sugar, cocoa, butter, eggs, honey, milk and vanilla in large mixing bowl. Stir in beets. Beat 2 minutes at medium speed. Pour into prepared pan.

3. Bake about 40 minutes*. Cool and frost.

4. Frosting**: combine cream, cream cheese, vanilla, salt. Add powdered sugar. Beat until fluffy. Spread on cake. Add nuts if desired.

*I had to bake mine for a total of 60 minutes before it was done.
**I didn't make the frosting, I just dusted the top of mine with powdered sugar.

This cake was a success when I made it on Sunday! You can't tell it has beets in it, so if you don't tell people, they'll be none the wiser. It's a very moist, light textured cake that was best when served still slightly warm.

I didn't name it that. But I think it's because you're suprised to find out there are beets in it since it's soooo good!
